Title: Mango Relish
Categories: Condiment Salsa Southwest Tex
Yield: 4 Servings

1 Ripe mango (peeled) --
  Pitted and diced
2tbRed bell pepper (peeled) --
  Finely diced
3tbJicama -- diced
1tbFresh cilantro -- chopped
1tbSerrano chile -- minced
  Juice of 1 lime
1/2tsSalt

In a mixing bowl, combine all the ingredients. Keep refrigerated. Serve with Black Bean-Goat Cheese Enchiladas or grilled meats or poultry.
